Maldivian Dish -Mas Bai
Serves 4
Ingredients:
- ½ kg rice
- ½ medium sized onion
- 1 large garlic clove
- githeyo mirus (chilies)
- 3 cloves of garlic
- Cinnamon stick
- 5 cardamon
- curry leaves, ramp leaf
- 3 spoon oil
- 1 green mango
- ½ tsp. black peppercorns (or to taste)
- 1 tsp. turmeric powder
- ½ inch thin slice of ginger
- 1 bread fruit chopped breadfruit (ours were around half an inch thick)
- 3 cups (thin coconut milk)
- 1 tsp. salt (or to taste)
- 1 fish (vacuum) or valhomas (our slices were roughly half an inch thick)
- 1 cup thick coconut milk (optional)
Instructions:
Wash the rice and if possible keep it in sunlight to dry completely.
Cut the onion, fish, chilies (githeyo mirus), mango
Crush the garlic cloves, and fresh ginger
In
a cooking pot add little oil, add the onion ginger, garlic, chilli,
ramp leaves, curry leaves, black pepper, cardamon, cinnamon stick and
salute for 6 to 8 minutes
Add the fish, mango little slices and after 3 minutes add the rice and salute for 5 minutes
When the rice is roasted add 1 table spoon tumeric and salt, add 3 cups of thin coconut milk
When the water is evaporated add the thick cup of coconut milk, cook until the milk gets evaporated fully.
This dish is often served with rihaakuru (fish paste).Maldivian's love to eat this when served hot.
