 Pumpkin Curry

 
 Ingredients

 


 Ingredients for Pumpkin Curry

  • Pumpkin (500 grams)
  • 3 Garlic cloves
  • 2 TSP, turmeric powder
  • 1 inch Ramp leaf
  • 2-3 cardamons
  • 1 Inch cinnamon
  • 1 Cup thick coconut milk
  • 2 green chilies  
  • 2 TSP Salt
  • 2 cups of water

 For tempering 

  • 1 sliced onion
  • 3 Garlic cloves
  • Some curry leaves
  • Maldivian dry fish (150 grams) or 1 spoon mustard
  • 2 to 3 spoon oil 
  • 2 spoon cumin
  • 3 spoon tomato paste

  Preparations

In a pan add the oil, add the onion, garlic, curry leaves, dry fish, cumin and salute for 3 to 4 minutes.

Transfer the ingredients to a bowl.

Wash the pumpkin, cut into small pieces.

In the same pan used for tempering add 2 cup of water, pumpkin, garlic, turmeric, cinnamon, cardamon pods, chilies (cut the chilies), ramp leaf.

And cover with a lid, Cook for 20 to 25 minutes in high or mid flame.

 Add the tempered ingredients.

Add the salt and tomato paste cook for 5 minutes.

Add the coconut milk and cook for 2 to 3 minutes in low flame.

It is a vegetarian curry can be eaten with rice or flat bread.
